Why we gently air-dry our nuts with warm air up to 65°C

Why we don’t just offer “raw” nuts:

Raw doesn’t automatically mean good. Just because something is raw doesn’t mean it’s good for your body. Many raw nuts contain natural defense compounds like phytic acid. These can inhibit the absorption of key minerals. Without targeted processing, they remain hard to digest.

Through our two-step fermentation process – soaking in spring water and gentle drying – we activate the nuts. This breaks down antinutrients and releases nutrients. The result: more digestible, more nutritious, and better tasting nuts.
